Blackened Cajun Lime Tempeh

So I wanted to add tempeh to my salads for this week. But I obviously wanted them to have some flavaaa...and some spice!



I've never cooked tempeh before but I think it was pretty good first try :)



First we can look at the homemade cajun seasoning


It smells SO good.

Homemade Cajun Seasoning:

Serving: about 1/2 cup

2 tsp sea salt (you can add another tsp if you like by I like to eat low sodium when I can)
1 tsp black pepper
4 tsp garlic powder
2 tsp onion powder
3 1/2 tsp smoked paprika (or regular paprika but the smoked kind from Trader Joe's makes this seasoning awesome)
2 tsp oregano
2 tsp red pepper flakes
2 tsp cumin
2 tsp dried thyme
1 tsp cayenne pepper

1. Mix all together and store in an air tight container!

Now onto what your going to do with this yummy stuff!

Blackened Cajun Tempeh:

1 8oz package organic tempeh (I bought Trader Joe's tempeh)
1/2 cup safflower oil
1/3 cup fresh squeezed lime juice
1/3 cup cajun seasoning
2 tbsp coconut oil

1. Now you can either cut the tempeh into cubes and use for a salad, or just cut the 8oz rectangle into smaller patty like thing and eat as a dish
They look like rice krispie treats! He he he :)

2. Mix the oil and lime juice together into a medium sized bowl, set aside
3. Dump your seasoning onto a plate.

4. In medium skillet, heat the coconut oil
5. Take the tempeh and first coat it in the lime and oil mixture and then coat every side in the cajun seasoning.
6. Cook the tempeh in the skillet for about 2-3 minutes each side if you just have the squares or just cook the cubed tempeh for about 3 minutes or until all is blackened (not burnt)

7. Remove from heat and add to salads or enjoy as a main dish! A squeeze of lime on this also tastes delicious and has lots of protein!!
